Fire first. Everything else follows.
Twenty-eight seats around one wood fire. A single tasting menu that changes with the season, cooked over oak and ash, served once a night.
One fire. One menu. No shortcuts hiding anywhere.
We built this room around a six-foot hearth and let it make the rules. No gas, no induction — if it can't be cooked over oak, it isn't on the menu. That constraint is the whole point: fire makes you patient, and patience is most of cooking.
Nearly everything comes from within two hours of the door — the beef is dry-aged downstairs, the flour is milled in the Peaks, and the damsons were someone's garden surplus. The menu changes when the ingredients do, not when the calendar says so.

Take the whole room.
On Sundays the restaurant is yours — all twenty-eight seats, the fire lit early, the menu built with you over a phone call. Birthdays, weddings small enough to mean it, or no reason at all.
One booking, one bill, one very good night. We'll handle the rest.

Worth knowing
No walk-ins after 8pm. The menu is seven courses and unhurried — count on three hours. Children welcome on Sundays; the fire less so, we keep you at a wise distance.
Twenty-eight chairs. One of them yours.
We release tables eight weeks out, on the first of the month. Cancellations go to the list first — join it and we'll call in order.
